Vegetarian BBQ: Portobello Burger with Eggplant, Grilled Onions and Sweet Potato Fries

Summer grilling at it's healthiest and best.

Teriyaki Marinated portobello mushroom:
Red Onions, Eggplant, and Sweet Potatoes rubbed with olive oil and garlic salt:
Vegetarian Barbecue:
Volunteer cherry tomatoes from my garden:
Can't have a portobello burger with out a Side Salad
Portobello Burger Ingredients: -Portobello Mushroom -Red Onion -Eggplant -Tomato -Avocado -Blue Cheese Preparation -Soak eggplant in warm salt water for 30 minutes. -Cook red onions, eggplant, and sweet potato in olive oil and garlic salt Grilling Put all the vegetables on the bbq. Keep an eye on the grill. I burnt some sweet potatoes during the process. Garnish Burger Add lettuce, tomatoes, Avocado, and blue cheese to the portobello burger. Side Salad Ingredients: -Spring Mix -Tomatoes -Walnuts -Sunflower seeds -Blue cheese -Creamy poppy seed dressing (or your favorite)
